Made these vegan jalapeño poppers: http://minimalistbaker.com/vegan-jalapeno-poppers/ and this walnut pesto: http://hellyeahitsvegan.com/basil-walnut-pesto/ when we had friends over for cocktails last night. The left over ingredients made for a tasty lunch today: I spread the pesto on some sprouted grain sesame bread and topped it with some of the cashew “cheese” and sliced tomato and popped it into the toaster oven. Yum!

Enjoyed one of my favorite quick and easy meals this evening: I sautéed a mix of greens (kale, Swiss chard and collard greens) in low sodium vegetable broth and minced garlic and served them over quinoa with sautéed portobello mushrooms and sliced avocado drizzled with teriyaki sauce. Sometimes I’ll mix it up and add or replace ingredients like chopped baked sweet potato, thawed frozen peas and/or steamed broccoli.

Yum! My husband brought home a lovely bunch of radishes last night, so I decided to have roasted radishes and baby carrots for lunch today along with the greens sautéed with sunflower seeds. Here are the links for the recipes:
